I love to make Christmas cookies... or anything really that can be creative and decorative. Sure a lot of these cookies aren't exactly decoration material but they don't all have to be. :)Ever since I was a little girl I've always remembered there being a fair share of cookies in the house around this time of year and I absolutely loved it. I just get a really warm cozy feeling when I think about the platters and tins full of different cookies during Christmas time. It also makes me think of red and green plaid and bows, but that's a whole other story.
Chocolate Chip Cookies
Chocolate chip cookies are my absolute favourite. I literally eat every part of the cookie process, from the dough to the warm fresh out of the oven, to the day-or-so old ones (cookies don't last very long in my household). They are a definite guaranteed way into my heart. <3
Peanut Butter Cookies
Peanut butter cookies are amazingly simple and delicious. They are so easy to make and can even be made gluten free just as easily! (Everyone deserves to join in the Christmas cookie cheer, no matter what food allergies ;) )
You can make them cute and plain or there are two ways that I like to jazz them up when I'm feeling a little more outgoing.

Hershey Kiss Peanut Butter Cookies

For those who need MORE peanut butter and some chocolate :) Also: Some other ideas for this instead of using peanut butter cookie dough are drop sugar cookie dough or shortbread.

Snickerdoodle Cookies
Snickerdoodles are wonderfully light and fluffy with a sweet cinnamon hint. I'm going to let you in on a secret: I was never really a fan of snickerdoodles. My chummy and my sister always raved about them but I didn't start loving them until my sister made a batch a few months ago. They were absolutely delicious and I will never doubt them again.
Cream Cheese Cookies
Cream cheese cookies are tasty by themselves or they are a really good dough for a jam cookie.

Pinwheel Cookies
These are a really cute and not super chocolately cookie. You could even add a bit of food dye to the dough to make them even more Christmas-y.
Sugar Cookies
Sugar cookies are by far the most popular cookies during Christmas time because there are literally a million different ways to make, shape, and decorate them. There are two types of sugar cookies (drop and shapes) and are generally decorated by two methods (sugar or icing). For the shapes, the dough needs to be chilled, rolled out and cookie cuttered. Sugar cookies are a lot of fun to decorate and get everyone in the Christmas spirit. Plus you can eat some along the way ;) They're perfect for parties, whether you're bringing them to one or having people come over to decorate them with you.
Oatmeal Cookies
Usually when I make oatmeal cookies, I put raisins in them which is the norm. But sometimes when I'm feeling a bit cheeky, I will make oatmeal chocolate chip cookies instead. It's all about what you prefer.Gingerbread Cookies
Honestly, what kind of Christmas season is it without gingerbread men? (or gingerbread houses if you prefer) They're a lot of fun to decorate and depending on the recipe, they will be soft instead of hard and crunchy.In grade school, I used to go over my friend's house every year and we would spend hours decorating gingerbread houses. I, of course, would spend about half that time stuffing my face with all the sweets we were supposed to be using to decorate. One year, I mistook a can of cream cheese frosting for vanilla and ate it by the spoonful until I felt sick. Perhaps that's where my aversion to cream cheese sweets comes from.

Jam Cookies
I'm rather new to the whole jam cookie concept. I never really made them, but this year they will definitely be made as part of my massive cookie baking spree. I'm just torn over whether I want to make Thumbprint Jam Cookies or Christmas Jam Cutout ones.

Chocolate Mint Cookies
Chocolate cookies can be pretty versatile. I like to do a Peppermint M&M Chocolate cookie just for a little variety in my cookies. (That way the M&M cookies get represented haha) I use the red, green, and white holiday mint M&Ms, or whatever they are called. You could also use mint chips if M&Ms aren't your cup of tea but you still want that chocolate mint cookie.
Red Velvet Crinkle Cookies
I have never made these before but I will definitely be adding them to my 'To Make' list this year. The red colour is absolutely gorgeous, especially for Christmas time. I've included a link to the recipe (click the picture) I've found. It seems super easy, plus it doesn't have a ton of food dye (one of my other aversions). Also, my sister loves red velvet things so maybe these will catch her fancy.
Shortbread Cookies
Whether plain, sprinkled in powdered sugar, or half dipped in chocolate, the buttery taste of shortbread cookies will always hold a place in my heart (and arteries haha). As a Scot, I could never leave these out of my Christmas Cookie List.
Snowball Cookies
Snowball cookies have a sweet and slightly dry taste to them because of the almonds. They are perfect for parties or cookie exchanges. Plus they definitely fit the Christmas theme and look true to their name.
Wow, I never realized that I made such a MASSIVE amount of Christmas cookies. Better to have too many than too little. :) What are your favourite holiday cookies?
